Main day meals

Get ready! You put in some good choppy time and are gonna love all the veggies front and center in the recipes this week. Your Thai Beef marinade is pulling double duty for the week by also operating as your dressing for the Thai Beef Noodle Salad. Be prepared to give yourself a little more time for the soup so you can make your own delicious vegetable stock.

VEGETABLE STOCK: If you’re down (and able) to use your vegetable leftovers, you’ll make your own stock for the Lemony Garbonzo and Cannellini Bean Soup. It comes together without much tending (about 25 minutes), and not only do you reuse scraps, you get a ton of nutritional benefits!
