Main day meals
This week you’re really gonna be globe trotting! Not only will you be traveling to the Middle East with the Spatchcocked Chicken paired with a delightful Tahini Lemon Garlic Sauce, you’ll be quickly jetting through Greece on your way through the Southwest U.S. before arriving in Mexico. Whew. You’ve got a busy week jet setting so, go on, get to gettin’!
SPATCHCOCKED CHICKEN: Friendly reminder to leave yourself 30 minutes (if possible) before cooking the chicken so it cooks more evenly!

RESERVING COMPONENTS: Components you made and should reserve for another night are noted—it’s safe to say if there’s a lot of something you will use it in one or two other dishes. Reserve ahead of time to ensure quantities. :)
