  1. On a cutting board, shred the remaining chicken.
  2. Take the cucumber and cut in half. Thickly slice. Dice up the dried apricots.
  3. In each bowl, add spinach and top with chicken, cucumber, feta cheese, diced apricot, Red onion, and pomegranate seeds. Season with salt and pepper and serve with Lemon Garlic Tahini Sauce and Green onions.
