
Greek Burgers with Sweet Potato Fries

Instructions
- Preheat oven to 425 degrees F.
- On a sheet pan, put down parchment paper and put sweet potatoes onto pan. Coat with cooking spray and salt and pepper. Put in oven for 15 minutes and then turn. Cook for another 5-10 minutes (depending on thickness). Taste and season with more salt if needed. Reserve 1/3 fries for the Southwest Beef and Sweet Potato Skillet.
- While fries are cooking, in a small bowl, mix together mayonnaise, 4 tablespoons of Lemon Garlic Tahini Sauce and feta cheese. Season with salt and pepper.
- Heat a cast iron pan or large skillet to medium high heat. Press Italian seasoning onto both sides of the burger patties (if unseasoned) and put in the pan. For medium doneness, cook for about 2.5 minutes on each side (140°F is medium, 150°F is medium well, and over 160°F for well done). Remove and let rest for about 5 minutes.
- While resting, toast your buns in the pan if you like. Slice your tomato and cucumbers.
- To each burger, add the Lemon Garlic Tahini Sauce/feta spread on both sides of the buns and put spinach on the bottom bun. Place the burger on top of the spinach and top with tomato slices, cucumber slices, and red onion. Serve with sweet potato fries and ketchup.
