Main day meals

Things come together very quickly and easily for all the meals this week. We love the Kachumber Salad you prepped on Main Day and how it goes with literally everything (seriously, if you have extra, eat it with whatever, adding whatever herbs you like).

LETTUCE WRAPS: Look, we know lettuce wraps aren’t for everyone, but have the haters try this one, and I think they will agree this is actually a hearty and delightful version. If you do need a little more heft, though, put a warmed up leftover pita on the other side of that lettuce and you’ve got yourself a carb-tastic bite.
