  1. Dice the yellow onion and white mushrooms.
  2. In a cast iron pan or large skillet heat olive oil over medium heat. Once hot, add the diced yellow onion for 3-4 minutes before adding the chopped mushrooms. Cook for 2 minutes before adding the garlic cloves and frozen corn, continuing to stir. Season with salt and pepper. Cook for 3 minutes. Add the spinach and stir it in until it's barely wilted before removing from the heat.
  3. Put in a storage container and refrigerate.
