  1. On a cutting board, roughly dice the cucumbers and put in a bowl. Dice about 1/2 of a red onion and add to the cucumbers. Do the same for the tomatoes. Juice the lemon over the top. Mix gently.
  2. Note: Do not salt now as too much moisture will get drawn out. Salt right before serving.
  1. Roughly chop the mint, cilantro/parsley and store on the side. Garnish the salad with it right before serving.
