- Preheat the oven to 425 degrees F.
- On a sheet pan lined with parchment paper, add the cherry tomatoes and spritz with some oil spray, and season with salt and pepper. Cook for about 30 minutes until blistered and tomatoes have burst and dried out some.
- Let cool, and put in a tight fitting storage container before refrigerating.
