Cut the ends of the onion off and cut the onion in half. Remove the outer skin and dice the two onions. Reserve 1.5 of the onions in a separate baggy and refrigerate.
Mince the garlic.
Over medium heat in a medium to large skillet, heat a little olive oil, add the rest of the onion and garlic. Stir while cooking for about 2 minutes while softening the onion. Add a little salt and pepper.
Break up the Broccoli Florets into smaller pieces and add to the pan with the onion and garlic. Cook for about 3 minutes, stirring. Add the spinach and sun dried tomatoes, cooking through until spinach is slightly wilted. Add more salt and pepper and remove from heat. Let cool while continuing with your Main Day. Cover and refrigerate once cooled.
