Instructions
- Shuck the corn. Spritz the corn and zucchini with olive oil spray. Over medium heat over the gas flame, or on a grill pan, lay the corn and zucchini and cook for 5-6 minutes, rotating the sides so everything gets nicely charred.
- Cut the corn off the husks and add to a bowl (or add the canned corn). Dice the zucchini and add to the bowl. Add the feta, chopped almonds, pepper, and sliced green onions. Stir together, cover and refrigerate (salt before serving).
- Slice the remaining green onions and add to a baggy before refrigerating.
