- If using fresh corn, remove the husks and cut the corn off the cobs. Reserve the corn in its own container and refrigerate (you will combine later to make a corn salsa).
- Dice the tomatoes, red onion (dice the whole red onion and reserve 1/2 in a separate small baggy), jalapeño, and juice of one lime, and mix together. Put in a tight fitting storage container with as little extra air as possible before refrigerating. You will salt before serving.
