- Peel the sweet potatoes if desired (we like the texture and how the skins crisp up so we don’t peel them). Using a sharp knife, dice them about 1/2 inch thick. Place in a baggy or container.
- To the cauliflower, cut it first in half, and then it quarters. On a diagonal, cut out the core on each piece. Cut out as much of the stems as you like, and then use your hands or knife to break/cut them up into smaller pieces. Don’t leave any too large as you will want smaller pieces in the salad. Place in a separate baggy and refrigerate both baggies.
