Instructions

  1. On a cutting board, either shred with a fork or dice all of the remaining chicken. Set aside 1/2 to 1/3 of the chicken for the Salsa Verde Chicken Pazole.
  2. Mix in Teriyaki Sauce to taste into the remaining chicken in a small bowl.
  3. Peel the mandarin oranges and separate into segments.
  4. Chop up all of the romaine lettuce.
  5. In each bowl, add the chopped romaine lettuce, Shredded Red Cabbage, Cilantro and Green onions. Add the julienned carrots, mandarin oranges, chow mein noodles, cashews, and shredded chicken. Top with 2/3 of the Peanut Dressing and serve.
