  1. Preheat the oven to 425 degrees F. Line two large sheet pans with parchment paper.
  2. Slice the mushrooms if needed. On one sheet pan put the sliced mushrooms.
  3. Roughly chop the cabbage after removing the stemmy bits. Add the cabbage to the other sheet pan.
  4. Spray the mushrooms and cabbage with avocado oil spray. Toss with kosher salt and pepper before putting in the oven. Cook for 15-20 minutes, until browned. Continue with your Main Day while it cooks.
