- Preheat the oven to 425 degrees F. Line two large sheet pans with parchment paper.
- Slice the mushrooms if needed. On one sheet pan put the sliced mushrooms.
- Roughly chop the cabbage after removing the stemmy bits. Add the cabbage to the other sheet pan.
- Spray the mushrooms and cabbage with avocado oil spray. Toss with kosher salt and pepper before putting in the oven. Cook for 15-20 minutes, until browned. Continue with your Main Day while it cooks.
