  1. Cover a large sheet pan with parchment paper. To the peppers, cut off the four sides, working your way around the top steam and inner seeds. Slice into thin strips. Add the peppers to the sheet pan. Spray with the olive oil, and a sprinkle of kosher salt and pepper and toss evenly. Put in the oven.
  2. Cut the ends of the onion off and cut the onion in half. Remove the outer skin and slice the two onions into half moon strips.
  3. Once you’ve removed the pita chips, move them off the sheet pan and put the onion strips on top of the parchment paper. Spray the onions with the olive oil, and a sprinkle of kosher salt and pepper and toss evenly. Put in the oven. Cook the peppers and onions for 20 minutes.
  4. Remove once cooked, cool, and put in a large baggy/container together before refrigerating.
