
Kofta Kebabs with Mediterranean Salad and Pomegranate Saffron Rice

Instructions
- Preheat the oven to 425 degrees. Put parchment paper onto a large sheet pan.
- In a medium/large pot with lid, cook the saffron rice according to the instructions, usually 20-25 minutes. Reserve 1/2 the rice for Mediterranean Kofta Tacos.
- While cooking, place the kebabs/meatballs on the parchment paper and put in the oven. Cook for 15-18 minutes or until cooked through to your liking. Save 1/2 of the kebabs for the Mediterranean Kofta Tacos.
- Serve the Kofta Kebabs over rice, and sprinkle with pomegranate seeds, Green onions, and Parsley. Serve with Salsa on the side and add Cucumbers to the Salsa on the plates. Sprinkle with salt before serving.
