Instructions

  1. Soak the rice noodles according to instructions (usually 10-15 minutes) in a large bowl. While soaking, bring a pot of water to boil, and boil for as long as required (1-3 minutes typically). Drain and reserve half of the noodles for Tofu Noodle Stir Fry.
  2. Remove the tough outer layers of the red cabbage. Cut off the base stem of the cabbage and quarter the cabbage. Cutting diagonally around the rest of the root at the bottom, remove the rest of the stem pieces. Slice the cabbage in the short direction to create thin strips for the slaw. Put half in a container for Tofu Noodle Stir Fry.
  3. If you like, heat up the pork in the microwave with a wet paper towel over it.
  4. In your bowls, add a bed of the cabbage and portion your remaining noodles among all four bowls. Top with pork, Pickled Veggies, Cucumbers, Green onions, and Cilantro. Serve with Sriracha Sauce as your dressing.
