Instructions
- If using frozen peaches, toss in a few tablespoons of lemon juice when defrosting to prevent browning. Dice once defrosted
- To dice the fresh peaches, cut each peach in quarters to the pit and twist to separate the quarters. Remove the pit and dice the peaches and add to a large bowl.
- Dice the tomatoes and red onion and add to the bowl.
- Cut the top off of the jalapeño and cut it in half. Deseed if you don’t want it to be very spicy and finely chop the jalapeño. Add the jalapeño and juice of 1 lime to the bowl and mix. Wait to salt before serving.
- Put in airtight container and refrigerate.
