Instructions
- Preheat oven to 425 degrees F. Line two large sheet pans with parchment paper.
- Small dice the large sweet potatoes and add to the sheet pans. Spray with avocado oil and add kosher salt and pepper, stirring well.
- Add in the oven, and cook for 20-25 minutes. Cotinue with your Main Day while it cooks.
- Remove when cooked through, let cool, and add to a container before refrigerating.
