Instructions

  1. Preheat oven to 425 degrees F. Line two large sheet pans with parchment paper.
  2. Small dice the large sweet potatoes and add to the sheet pans. Spray with avocado oil and add kosher salt and pepper, stirring well.
  3. Add in the oven, and cook for 20-25 minutes. Cotinue with your Main Day while it cooks.
  4. Remove when cooked through, let cool, and add to a container before refrigerating.
