Instructions
- In a large bowl, combine the ground turkey with the red onion, oregano, garlic powder and salt and pepper. After mixed together, add the panko and whisked eggs to the mix and lightly fold the ingredients together. Gently knead the mix with damp hands until incorporated.
- Shape into a football shape and score into thirds. Place 1/3 of the turkey mix into a small tupperware and refrigerate.
- We recommend this two step method to make this process go significantly faster: With the rest of the turkey mix, first use a small scoop or spoon to make the meatballs into roughly 1/2-inch balls and place on a tray (should have over 40 balls). Once all the balls are roughly formed, dampen your hands and lightly shape and roll the meatballs between your palms to finish making them into neat balls.
- Put the meatballs in a container, using parchment paper between the layers to stack them in a smaller container. Seal and refrigerate.
