Instructions
- In a large pot with a lid, cook the lentils according the package instructions. Cook until firm, but not mushy to preserve the texture over time. Typically youβll cook them around 30-35 minutes max to keep them firm. Set a timer and continue with your Main Day while they cook.
- Drain and run under cold water when cooked but firm. Reserve 1 cup of cooked lentils before proceeding with assembling the salad.
- While cooking, prep the other veggies and add to a large bowl. Chop the mint but reserve. Add the raisins, nuts, and add the lentils when finished. Stir together and place in a small container before refrigerating. Add mint to each portion before serving.
