  1. Put the palm of your non-cutting hand on the top of the breast. Using your best judgement, insert a very sharp knife about halfway horizontally into the breast and slowly slice through the breast until you’ve halved it. Do the same for all the breasts.
  2. Store in an airtight baggie (seriously, squeeze all the air out) and place in a bowl to prevent leaks in the refrigerator.
