  1. Preheat the oven to 400 degrees F. Put parchment paper on two large sheet pans.
  2. After cutting off the ends, cut each zucchini in half longways. Depending on the size. cut the zucchini in half/quarters long ways again, and then dice them. Put on a large sheet pan.
  3. Remove the ends of the onions and dice. Put on the other sheet pan.
  4. Dice three bell peppers the same size as the onions after removing the seeds and stem. Put on the same tray as the onions. Spread flat.
  5. Spray with avocado oil or olive oil spray. Put kosher salt and pepper on the veggies and toss.
  6. Put in the oven for 25-30 minutes, until roasted. Let cool and put the onions/peppers in one container and the zucchini in another.
