Instructions
- Preheat the oven to 400 degrees F.
- Shred the cheddar cheese.
- In a large bowl, combine the shredded chicken, 1/3 the shredded cheddar cheese (Reserve 1/3 shredded cheese for Baked Creamy Jackfruit Tacos) cooked quinoa, 1/2 the pinto beans (Reserve 1/2 of pinto beans for Baked Creamy Jackfruit Tacos), corn, Spicy BBQ Sauce, and Cilantro. Mix well and add kosher salt and pepper after tasting as needed. Spray a 9x9 baking dish with oil spray, and add the mixture to the pan. Top with crumbled corn chips and the rest of the shredded cheese. Cook in the oven for 20 minutes.
- Remove and let rest for 3-5 minutes before cooking.
- Top with avocado, Green onions, Cilantro, and a drizzle of Spicy BBQ Sauce and hot sauce.
