
Baked Spicy Jackfruit Tacos

Instructions
- Drain and rinse the jackfruit.
- In a large skillet over medium high heat, add the jackfruit and the vegetable broth. While coming to a boil, add the chipotles, garlic, chili powder, cumin, lime juice, and chilis to the pan. Once at a boil, reduce to a low simmer. Cook for 10-15 minutes, and once you see the jackfruit starting to come apart, mash the jackfruit with a potato masher (easiest) or shred with two forks.
- Add the Cooked Veggies and cook for a few more minutes. Add the cream cheese and melt into the jackfruit. Taste and season with salt and pepper.
- Turn the broiler on low.
- To each taco shell, add the jackfruit mixture. Top with cheddar cheese and pop on the middle rack under the broiler. Let cook for 3-5 minutes, until cheese is melted.
- Top with Cilantro, Green onions, and salsa. Serve with lime slices and pinto beans on the side.
