Instructions

  1. Drain and rinse the jackfruit.
  2. In a large skillet over medium high heat, add the jackfruit and the vegetable broth. While coming to a boil, add the chipotles, garlic, chili powder, cumin, lime juice, and chilis to the pan. Once at a boil, reduce to a low simmer. Cook for 10-15 minutes, and once you see the jackfruit starting to come apart, mash the jackfruit with a potato masher (easiest) or shred with two forks.
  3. Add the Cooked Veggies and cook for a few more minutes. Add the cream cheese and melt into the jackfruit. Taste and season with salt and pepper.
  4. Turn the broiler on low.
  5. To each taco shell, add the jackfruit mixture. Top with cheddar cheese and pop on the middle rack under the broiler. Let cook for 3-5 minutes, until cheese is melted.
  6. Top with Cilantro, Green onions, and salsa. Serve with lime slices and pinto beans on the side.
