  1. Preheat the oven to 375 degrees F.
  2. Remove the packaging from the tofu and put on a plate with a paper towel. Dry as best you can. Put in the microwave on high for 2 minutes. Remove from the microwave and let cool for a few minutes.
  3. Dice the tofu into small cubes. Spread parchment paper onto a large sheet pan. Spread the tofu on the sheet pan and cook for about 20 minutes until lightly browned. Continue with the Main Day while cooking.
  4. Once cooked, remove and let cool before refrigerating.
