Instructions

  1. In a large bowl, combine the Red Cabbage, garbanzo beans, shredded carrots, Cilantro, and Green onions. Mix together well. Add in as much Peanut Dressing as you like, coating well.
  2. In a large skillet over high heat, heat the tortillas for about 30 seconds on each side. Add to a plate with a dish towel, and cover them so they stay warm.
  3. Heat the barbacoa if you like in the microwave.
  4. To each wrap, add barbacoa beef and top with the chopped salad and Pickled Red onions. Wrap the tortillas in aluminum foil if you want to keep the wrap tight. Serve with extra chopped salad if you like.
