  1. Preheat the oven to 400 degrees F. Cover two large sheet pans with parchment paper.
  2. Peel the sweet potatoes if desired (we like the texture with skins on). Using a sharp knife, small dice them. Put on one sheet pan.
  3. Slice the washed broccoli where the florets meet the base and cut off as much as you like of the broccoli florets’ stems. Cut florets and the stems medium to small sized. Put on the other sheet pan.
  4. Spray both sheet pans of veggies with olive oil spray, and sprinkle with salt and pepper.
  5. Bake both in the oven for 25-35 minutes. Set a timer and continue with your Main Day. Once browned and roasted, let cool before putting each in their own container and refrigerating.
