Instructions
- Cut the end off the mini peppers and scoop out the seeds. Slice the peppers into thin rings. Add to a bowl.
- Finely slice the red onion and add to the bowl. Add the shredded carrots and mix well. Cover and refrigerate.
- Finely dice the rest of the red onion and put in a baggy and refrigerate.
