  1. Cut the end off the mini peppers and scoop out the seeds. Slice the peppers into thin rings. Add to a bowl.
  2. Finely slice the red onion and add to the bowl. Add the shredded carrots and mix well. Cover and refrigerate.
  3. Finely dice the rest of the red onion and put in a baggy and refrigerate.
