  1. Preheat the oven to 425 degrees F.
  2. Line two large sheet pans with parchment paper.
  3. Cut up the cauliflower into small florets and add to a large mixing bowl. Drain the chickpeas and add to the cauliflower.
  4. Add the olive oil and a good sprinkle of kosher salt and pepper to the cauliflower and chickpeas and stir well. Spread on both sheet pans evenly and spread the florets so they aren’t crowded.
  5. Roast in the oven for about 30 minutes. Remove and let cool. Put in a container and refrigerate.
