Instructions
- Preheat the oven to 425 degrees F.
- Line two large sheet pans with parchment paper.
- Cut up the cauliflower into small florets and add to a large mixing bowl. Drain the chickpeas and add to the cauliflower.
- Add the olive oil and a good sprinkle of kosher salt and pepper to the cauliflower and chickpeas and stir well. Spread on both sheet pans evenly and spread the florets so they arenβt crowded.
- Roast in the oven for about 30 minutes. Remove and let cool. Put in a container and refrigerate.
