Instructions
- Preheat the oven to 425 degrees F.
- Line two large sheet pans with parchment paper.
- Cut up the cauliflower into small florets and add to a large mixing bowl. Drain the chickpeas and add to the cauliflower.
- In a small bowl, combine the garlic powder, cumin, paprika, salt, and pepper. Add the olive oil and stir together.
- Add to the cauliflower and chickpeas in the bowl and stir well. Spread on both sheet pans evenly and spreading so they arenβt crowded.
- Set a timer and roast in the oven for 30-35 minutes, continuing with your Main Day. Remove once browned and let cool. Put in a container and refrigerate.
