  1. Preheat the oven to 425 degrees F.
  2. Line two large sheet pans with parchment paper.
  3. Cut up the cauliflower into small florets and add to a large mixing bowl. Drain the chickpeas and add to the cauliflower.
  4. In a small bowl, combine the garlic powder, cumin, paprika, salt, and pepper. Add the olive oil and stir together.
  5. Add to the cauliflower and chickpeas in the bowl and stir well. Spread on both sheet pans evenly and spreading so they aren’t crowded.
  6. Set a timer and roast in the oven for 30-35 minutes, continuing with your Main Day. Remove once browned and let cool. Put in a container and refrigerate.
