Instructions
- Heat the olive oil in a large cast iron pan or large skillet over medium high heat. Add the ground turkey, poblanos, onions, and use a wooden spoon to break up the meat as it cooks. Cook 3-4 minutes. Add oregano, kosher salt, and pepper to it, and brown completely, about 6-8 minutes. Remove 1/2 of the ground turkey for Greek Ground Turkey Bowls.
- After removing half of the ground turkey, add the cumin, chili powder, tomato sauce, and ketchup to the skillet. Stir together and heat through. Taste and season with more salt and pepper if needed.
- Toast the buns if you like. Spread a little Romesco Sauce on the buns.
- Serve the Taco Joes with avocado slices on the buns. Serve with the Corn and Zucchini Salad (salt it) on the side. Garnish with Green onions.
