- In the microwave, heat up the rice with a damp paper towel on top until warmed through.
- Microwave the same way with the leftover ground meat.
- Serve the rice and ground meat over arugula and/or spinach. Serve with olives, feta cheese, Corn and Zucchini Salad (salt it), Green onions, and a scoop of Romesco Sauce.
