Instructions
- Remove the pineapple from its rind (if you don’t have one, we recommend a Pineapple Corer). Small dice the pineapple and add to a bowl.
- Finely dice a jalapeño, red onion, and red pepper, add to the bowl. Juice the lime and stir it all together. Put in a small container and refrigerate.
Garnishes
- To the remainder red onion, finely dice it, put in a container and refrigerate.
- To the remainder red pepper, finely dice it, put in a container and refrigerate.
- To the cilantro, chop it and refrigerate it. You will add to the salsa before serving.
