  1. In a large bowl, add your shrimp and 1/3 Sriracha Citrus Dressing to marinade for 10-15 minutes.
  2. Add your rice, water, salt, and oil to a saucepan and cook according to the instructions. Reserve 1/3 of the rice for Carnitas Peach Salsa Burritos.
  3. While the rice cooks, heat a skillet or cast iron pan on medium heat and add just the shrimp (not the marinade) to the pan, making sure not to crowd the pan. You may have to cook in batches. They cook very quickly, so turn after a minute or so once they’ve turned pink. Remove immediately from the pan.
  4. On each plate, add the rice, cooked shrimp, sliced avocado, and Citrus Cucumber Salad (salt the citrus salad and avocado now). Top the shrimp and/or rice with Chipotle Sauce and Green onions as desired.
