Then, submerge the veggies root-end down into a bowl of ice-cold water. The icy dip rehydrates the cells and brings back their natural crispness, so let them soak for anywhere from 10 minutes to an hour depending on their level of limpidity. Once they've regained their snap and vigor, drain them, pat dry, and they're ready to grace your plate again.
