- In the microwave—use a damp paper towel over each to help keep moist—heat up the leftover chicken, rice, Verde Black Beans, cooked peppers and onions, and the plantains (if using frozen).
- To assemble, over a bed of romaine (and any leftover arugula if you like), add the rice, beans, peppers and onions, chicken, Quesadilla cheese, plantains, sliced avocado, and Cilantro.
