  1. In the microwave—use a damp paper towel over each to help keep moist—heat up the leftover chicken, rice, Verde Black Beans, cooked peppers and onions, and the plantains (if using frozen).
  2. To assemble, over a bed of romaine (and any leftover arugula if you like), add the rice, beans, peppers and onions, chicken, Quesadilla cheese, plantains, sliced avocado, and Cilantro.
