
Pineapple Pulled Pork Sandwiches

Instructions
Instant Pot:
- In a small bowl, combine the cumin, paprika, garlic powder, kosher salt, and pepper. Take the pork and cut into large chunks. Rub the chunks with the spice mixture.
- Put the trivet in the bottom of the pot. Put the apple juice, pineapple chunks (with the juice), and lime juice at the bottom and add the pork chunks onto the trivet. Set the Instant Pot to pressure cook on HIGH for 1 hour and seal the lid tightly.
- Once pork has finished cooking, allow the steam to escape naturally (or you can release after 15 minutes). Once steam has finished escaping and the steam valve pops, carefully remove the lid.
- Remove the pork, as much of the pineapple as you like, and shred. Add about 1/2 cup of the juices from the instant pot, taste, and season with more salt if needed. Reserve about 1/3 of the pork in a container for the Pineapple Pork Burritos. Reserve 1/2 pineapple chunks for Pineapple Pork Burritos.
- While cooking, combine the Sliced Red Cabbage (or if too much, most of it), carrots, Green onions, cilantro, kosher salt, and lime juice together.
- Microwave the baked beans until hot.
- To serve, add the pineapple pork, slaw, and a drizzle of BBQ Sauce on top of the hamburger bun. Serve with baked beans on the side.
Slow Cooker
- Put the apple juice, pineapple chunks and juice, and lime juice at the bottom of the slow cooker and add the seasoned pork chunks. Cover, and cook on HIGH for 8 hours or LOW for 10 hours.
- Remove the pork, as much of the pineapple as you like, and shred. Add about 1/2 cup of the juices from the instant pot, taste, and season with more salt if needed. Reserve about 1/3 of the pork in a container for the Pineapple Pork Burritos. Reserve 1/2 pineapple chunks for Pineapple Pork Burritos.
