
BBQ Stuffed Baked Sweet Potatoes

Instructions
- Prick the sweet potatoes 6-8 times per potato all over. Microwave each large potato for 5 minutes. Check it for doneness. A fork should easily slide in it when fully cooked. If using small potatoes, cook in the microwave two at a time, and cook for about 6 minutes and check to make sure done. Cook it for 2 minutes at a time until cooked through.
- While cooking, mash the avocados, add lime juice, kosher salt and pepper. Mix together.
- Heat the baked beans in the microwave. Reserve 1/2 baked beans for Pineapple Pulled Pork Sandwiches.
- Heat the Sliced Peppers in the microwave until hot.
- To serve, slice open each sweet potato. Mix the sweet potato and add kosher salt and pepper. Top each sweet potato with baked beans, Sliced Peppers
