
Lemon Greek Potatoes and Eggs

Instructions
- Preheat the oven to 400 degrees F. Line two sheet pans with parchment paper.
- Small dice all the yellow potatoes and add to the sheet pans. Add the Diced Peppers and Diced Onions to the sheet pans. Drizzle everything with olive oil, salt, pepper, garlic powder, and dried parsley. Mix together with a spoon or your hand.
- Bake for 20-25 minutes, until the potatoes are cooked. Reserve 1/2 roasted potatoes for Lemon Garlic Chicken.
- When close to finished, in a medium sized skillet, add some of the butter and cook two eggs at a time, how you like it, adding salt and pepper.
- On each plate add mixed greens, Greek potatoes, and add the fried eggs on top. Top the potatoes with feta cheese and parsley. Serve with sliced avocado Serve with sliced avocado and drizzle with Lemon Garlic Sauce.
