Instructions
- Bring a large pot of water to boil over high heat. Add the tortellini once boiling and cook according to the package instructions. Drain and set aside.
- While cooking, in a blender add the creamy herb garbanzos to the blender. Blend well. Taste and season with more salt if you like.
- Mix together the Pesto, tortellinis, halved tomatoes, roasted red tomatoes, and as much of the blended garbanzos as you like (you might not use it all) in a bowl.
- To serve, top the tortellinis with parmesan cheese, basil, and black pepper.
