Instructions

  1. In a pot with lid, make the farro according to the instructions. Reserve 1/3 farro for Fruity Tofu Summer Grain Bowl.
  2. While cooking, in a large skillet or wok, add a little olive oil to the pan over medium high heat. Add the sliced sausage and cook for 3-4 minutes on each side, browning slightly. Remove from the skillet once browned.
  3. Add more olive oil and the Diced Onions and Diced Bell Peppers and cook for 3-4 minutes. Add the Sliced Zucchini, Celery, and Corn. Cook for another 3-4 minutes. Juice a lemon on top.
  4. Serve the sausage and veggies over baby spinach with goat cheese and lemon slices.
