Instructions
- Take the extra firm tofu and microwave for 4 minutes. Let cool for a few minutes, then slice into triangles.
- In a small bowl, combine the soy sauce, sriracha, and cornstarch, stirring until the cornstarch is melted in. Put the tofu triangles into the liquid.
- Heat a large skillet over medium high heat. Add the tofu and liquid and let cook for 4 minutes on each side. Remove from the heat.
- In each bowl, combine mixed greens, tofu, farro, cherry tomatoes, peaches, Sliced Zucchini, cherries, and goat cheese. Drizzle with Honey Mustard Dressing and serve with lemon slices and Parsley.
