Instructions

  1. Take the extra firm tofu and microwave for 4 minutes. Let cool for a few minutes, then slice into triangles.
  2. In a small bowl, combine the soy sauce, sriracha, and cornstarch, stirring until the cornstarch is melted in. Put the tofu triangles into the liquid.
  3. Heat a large skillet over medium high heat. Add the tofu and liquid and let cook for 4 minutes on each side. Remove from the heat.
  4. In each bowl, combine mixed greens, tofu, farro, cherry tomatoes, peaches, Sliced Zucchini, cherries, and goat cheese. Drizzle with Honey Mustard Dressing and serve with lemon slices and Parsley.
