Instructions
- Turn the broiler on high. Line a large sheet pan with aluminum foil. Remove the husks from tomatillos and wash well.
- Slice the jalapeños in half lengthwise, removing the seeds/pith if you like. Lay the tomatillos and peppers on the sheet pan and broil on high for about 4-5 minutes.
- Flip the peppers and tomatillos and broil another 3-4 minutes. The tomatillos should be browned and just starting to burst. Remove from the oven and let cool, continuing with your Main Day until you’ve completed all the other steps.
- AT THE END OF THE MAIN DAY: Place the tomatillos and peppers in a blender or food processor. Add the cilantro, onion, garlic, salt, cumin, and lime juice and blend until desired consistency (we prefer somewhat smooth).
- Place in a jar or small container and refrigerate.
