  1. Turn the broiler on high. Line a large sheet pan with aluminum foil. Remove the husks from tomatillos and wash well.
  2. Slice the jalapeños in half lengthwise, removing the seeds/pith if you like. Lay the tomatillos and peppers on the sheet pan and broil on high for about 4-5 minutes.
  3. Flip the peppers and tomatillos and broil another 3-4 minutes. The tomatillos should be browned and just starting to burst. Remove from the oven and let cool, continuing with your Main Day until you’ve completed all the other steps.
  4. AT THE END OF THE MAIN DAY: Place the tomatillos and peppers in a blender or food processor. Add the cilantro, onion, garlic, salt, cumin, and lime juice and blend until desired consistency (we prefer somewhat smooth).
  5. Place in a jar or small container and refrigerate.
