Instructions

  1. Add the spinach, Roasted Broccoli and Cauliflower, roasted zucchini and onion, and leftover peas into a blender. Add olive oil and at least half of the chicken broth. Purée well (add more liquid if too thick to blend). Add into a pot (if you want to heat it) or a large bowl. Then add the cannellini beans, rest of the chicken broth, half of the lemon juice, and parsley to the blender. Purée and then add to the rest of the puréed veggies in the large bowl.
  2. Add salt, pepper, and red pepper flakes, and stir well. If too thick, thin out with more chicken broth or water. Taste and add more lemon juice or salt as needed.
  3. To serve, top with Whipped Feta and Green onions.
