Instructions

  1. In a large skillet or cast iron pan, heat it over medium high heat. Add the ground beef (or if using other ground meat, add a little olive oil). Break it up with a wooden spoon and brown it, stirring only occasionally to get browned bits. Add the cumin, chili powder, garlic powder, salt, and pepper, stirring in. Before almost finished cooking through, stir in the diced mushrooms, Jalapeños, and Red Onions. Cook for 4-6 minutes, stirring occasionally. Reserve 1/2 of the ground beef and mushroom for Mexican Beef Stuffed Peppers.
  2. While cooking, heat up the rice and Roasted Sweet Potatoes until hot with a damp paper towel over the top.
  3. In each bowl, add arugula, rice, Roasted Sweet Potatoes, and ground beef. Top with avocado and Green Onions and drizzle with Lime Chili Dressing.
