  1. Preheat the oven to 425 degrees F. Line two large sheet pans with parchment paper.
  2. Thinly slice the sweet potatoes into rounds. Place them on the sheet pans. Spray with olive oil spray, and a good sprinkle of salt and pepper.
  3. Roast for 20-25 minutes. Continue with Main Day while it cooks.
  4. Remove from the oven, let cool, and refrigerate.
