Instructions
- Preheat the oven to 425 degrees F. Line two large sheet pans with parchment paper.
- Thinly slice the sweet potatoes into rounds. Place them on the sheet pans. Spray with olive oil spray, and a good sprinkle of salt and pepper.
- Roast for 20-25 minutes. Continue with Main Day while it cooks.
- Remove from the oven, let cool, and refrigerate.
