Instructions

  1. Preheat the oven to 400 degrees F.
  2. Take the bell peppers, halve, and remove the seeds and seeds.
  3. In a large bowl, add the ground beef, rice, a bit of Cilantro, 1/2 the cheddar cheese, and 3/4 the salsa. Taste and season with more taco seasoning. Add more salt and pepper as needed.
  4. In each bell pepper, add the mixture. Top with the remaining salsa.
  5. Put each on the sheet pans. Add 1/2 cup of water to the bottom. Top with aluminum foil and put in the oven. Steam/cook for 30 minutes. Remove from the oven, remove the foil, and top with cheddar cheese. Pop back in and cook for about 2 minutes until cheese is melted.
  6. Serve over arugula with hot sauce on the side. Top with Cilantro and Green onions.
