
Mexican Beef Stuffed Peppers

Instructions
- Preheat the oven to 400 degrees F.
- Take the bell peppers, halve, and remove the seeds and seeds.
- In a large bowl, add the ground beef, rice, a bit of Cilantro, 1/2 the cheddar cheese, and 3/4 the salsa. Taste and season with more taco seasoning. Add more salt and pepper as needed.
- In each bell pepper, add the mixture. Top with the remaining salsa.
- Put each on the sheet pans. Add 1/2 cup of water to the bottom. Top with aluminum foil and put in the oven. Steam/cook for 30 minutes. Remove from the oven, remove the foil, and top with cheddar cheese. Pop back in and cook for about 2 minutes until cheese is melted.
- Serve over arugula with hot sauce on the side. Top with Cilantro and Green onions.
