Instructions
- Heat the Roasted Sweet Potatoes in the microwave if you like.
- In a large bowl, massage the Chopped Kale with a bit of Lime Chili Dressing (the lime will help break down the kale). Massage for about 2 minutes, until it’s thoroughly broken down.
- On each plate, add the Chopped Kale, Roasted Sweet Potatoes, corn, Red onions, cannellini beans, avocado, and pumpkin seeds. Add a drizzle of Lime Chili Dressing and serve.
