Instructions
- Preheat oven to 400 F.
- In a small bowl, mash together miso paste, butter, and black pepper with a fork. Add the salmon filets to a baking sheet, skin side down, and spread the miso butter over the top. Bake for about 15 minutes or until salmon is flaky.
- While cooking, in the microwave, heat up the Wild Rice.
- In a large bowl, combine snap peas, radishes, and feta. Drizzle about 2/3 of the Sugar Snap Pea Dressing. Taste and season with more as needed.
- To serve, plate the Wild Rice and salmon over arugula with Sugar Snap Pea Salad on the side. Drizzle the salmon with Miso Scallion Salsa.
