Instructions

  1. Preheat oven to 400 F.
  2. In a small bowl, mash together miso paste, butter, and black pepper with a fork. Add the salmon filets to a baking sheet, skin side down, and spread the miso butter over the top. Bake for about 15 minutes or until salmon is flaky.
  3. While cooking, in the microwave, heat up the Wild Rice.
  4. In a large bowl, combine snap peas, radishes, and feta. Drizzle about 2/3 of the Sugar Snap Pea Dressing. Taste and season with more as needed.
  5. To serve, plate the Wild Rice and salmon over arugula with Sugar Snap Pea Salad on the side. Drizzle the salmon with Miso Scallion Salsa.
